Gluten Free Fish Nuggets

Today I made gluten free fish nuggets for dinner and served it with the left over mac 'n cheese. Again an easy one to make!
This one takes about 10 minutes or less.

Ingredients:

Fish: White of any kind.1 or 2 fillets. I used cod because that is what I had in my freezer. I love the individual vacuum packed fish from Costco. It is so easy to pull out one or two pieces and it defrosts in water fast.

Rice flour: 1/4 a cup: This flour makes the coating crispier than using just GF flour alone.


All purpose Gluten free flour: 1/2 cup

Salt and pepper to taste

Canola oil for frying: 3 cups



Mix both flours with the salt and pepper together in a bowl. Slowly add in water and whisk or mix with hand until the mixture is just very slightly watery and blended well.

Toss in the fish to coat well

Toss coated fish into HOT frying oil.

Cook about 6 minutes until golden brown. Pull out fish with tongs or a slotted spoon and let cool on paper towels to soak up remaining oil.

I would have taken a picture..............but they were gone in a flash!
