Gluten free and Milk free mac 'n cheese

Mac 'n Cheese





This one is so amazingly easy! It takes about as long as it takes you to cook pasta (12 min.)








Ingredients:

1/2-3/4 cup Rice milk
2 Tbsp. olive oil
1 package Rice Shreds cheddar flavor
1 box Ancient Harvest Quinoa Elbow pasta
2-3 Tbsp. All purpose gluten free flour(I use bobs red mill)





Start water boiling for pasta and cook pasta 10-12 minutes until tender.

While pasta is cooking, in another sauce pan:on medium heat: heat 1-2 Tbsp. olive oil, then slowly add in about 2-3 Tbsp of flour mix. With a whisk keep stirring until slightly thick. When the oil and flour is like a rouge slowly add in 1/4 of rice milk at a time and keep whisking:now add in whole package of "cheese":turn heat to low and keep whisking until all cheese is melted and you have a smooth sauce.

Strain pasta and add into cheese sauce.
